The vines are bursting with grape buds already. This could mean an early pick in 2010 due Southeast Queensland’s 2009 warmer Winter. Our chardonnay graft over to Verdelho has worked well with a 85% strike rate and new canes growing towards the first wire.

Here is Patrick’s Recipe for our latest Summer Dessert:

Chilled Mango and Macadamia Torrone with Chardonnay Honey.

4 egg yolks
75 grams castor sugar
6 tablepoons of Chardonnay Honey
100 ml whipped cream
100 grams of roasted macadamia nuts
1 Mango
Flame Hill Vineyard White Liquor Muscat

Method
Whisk the yolks with the sugar until foamy, add boiling Syrup slowly until thickening.
Dice the mango and macadamia nuts and whip the cream
Mix the cooled egg mixture with cream.
Add Flame Hill Vineyard’s White Liquor Muscat to serving glass and spin so there is thin coating around the glass.
Place mango on the bottom.
Sprinkle a thin layer of macadamia nuts over the mango.
Cover with sabayon mixture.

Restaurant Christmas Special

Chef Patrick Bender has planned a four course Summer degustation to showcase Flame Hill Vineyard's wines. Available throughout December (Thursday - Sunday) this festive feast is $80 per head and features four dishes and four glasses of wine ($60 without wine) .
Loosen your belts and be prepared to indulge the taste buds. Book your table for lunch at our Montville Restaurant to enjoy this December holiday feast.
