Montville Verdelho Verjus

(Verjus is a culinary additive made from unfermented grape juice)
Hand picked from the Verdelho Vines on the Northern front of the FlameHill Restaurant Deck and gently basket pressed in the FlameHill Winery prior to bottling
The grapes were picked just post veraison ( colouring) for freshness, a zippy natural acidity while capturing the aromatic tropical nuances Flame Hill Verdelho organically produces.
A revelation with all meats white – poultry – pork – rabbit and of course seafood which has always been the natural choice with wine from the same vineyard. Perfect as a salad dressing and adds another layer of flavour to vegetarian cuisine and spicy foods.
Recipes
Verdelho Verjus and Honey salad dressing
100ml Verdelho Verjus
1 teaspoon english mustard
1 tablespoon honey
350ml vegetable oil
Place all ingredients in a clean jar and shake until all the ingredients are combined, pour over your favourite salad
Verdelho Verjus Granita
700ml Verdelho Verjus
Juice of 1 lemon
100g sugar
Place all ingredients in a saucepan and bring to a simmer, once the liquid is cooled place in a container and freeze overnight.
To serve simply scrape with a fork and spoon onto whatever you are serving- note the granita is great as a palate cleanser and fantastic with freshly shucked oysters
